How to use a version of a Windows Driver (mouclass.sys) from a previous build of Windows 10

I work for a company that provides POS systems. Many of our clients are still using ES500 terminals from PAR. These have an older style touchscreen integrated. Windows 10 builds past 1809 break the touchscreen. I believe this is due to the update of mouclass.sys. If i go to device manager – mice and other pointing devices – UtcRS232 Touch Panel and look at the driver information it has the specific device driver and mouclass.sys. It is a newer version of mouclass.sys and we are not making any other changes to the system.

I’ve tried to put the old driver back in which requires changing the owner of the driver, then I can delete the new one and copy the old one in, but in the process the old one loses it’s digital signature.

Is there any way to get the old driver file to work with the new build. We are currently working with build 1909

Any other workarounds would be welcome as well.
