Windows Defender seems to have messed everything up in a split second

Sorry for the vague title, but I have no idea what to even ask, this is so confusing and frustrating

So I’ve got a HP Pavilion gaming laptop with a Ryzen 5 4600H and 8 GB of RAM and a 256 SSD. So it’s not a slow laptop by any means.

Yesterday I noticed the laptop incredibly slow after a BIOS update and when I checked Task Manager it showed 60-70% RAM usage and “antimalware service” from Windows Defender. I’ve looked at countless resources to try to figure out how the hell to stop the ridiculous scan that’s been going on for 17+ hours now.

I finally decided to do a factory reset (I’ve been wanting to do one anyway to clear up some junk). So now I need to backup data. But now when I connect an external SSD to my laptop via USB-C, the transfer speed I get is averaging 10 FREAKING KBps, and I’ve seen it go as low as 600 BYTES/SECOND. Like is this ALL from Windows Defender? Holy Christ, is it more viable at this point to lose all the data so the reset will happen in under 20 hours?
